My son was really into magic at this time and had even performed a magic show for the talent show at his school. It was pretty impressive for a 6 year old. We rented the pavilion at Oakland Park in Columbia and hired Mario Manzini to do a magic show. It was very interactive and fun and my son loved being a part of the act.

For party favors I made white lunch sacks into bunny heads popping out of plastic black top hats for each of the kids and each one got his/her own magic wand.

For the Cake:

The magician hat was made of four, 9 in round cakes stacked and covered in black tinted butter cream and a fondant covered cake board as the top of the hat. All the decorations were crafted out of home made marshmallow fondant.

This was definitely a birthday to remember!

Princess Castle Cake

My daughter turned three in February this year and loves Minnie Mouse and Princesses so we combined the idea for her birthday party. Everything was pink and purple, just the way she likes it. Her daddy even bought her a beautiful pink princess dress of her own to wear to her special day.

I made the bottom cake a double layer 9″ chocolate and on top of that a 6″ double layer chocolate as well. The towers were all made of vanilla sponge cake and the tops of ice cream cones covered with fondant pink and purple circles. The path leading to the castle was pink butter cream with edible pink glitter lined with candy coated almonds.

I made sugar cookie cut outs shaped like Minnie mouse for the kids to decorate and eat. What a fun activity and treat.

We had her birthday party at the pavilion at Stephen’s Lake Park and it was the perfect location for all of our family and friends to celebrate our princess’s birthday. It was snowing that day just like the day she was born but the party went on as planned. Happy BIrthday LIttle Princess!

I decided to do a jungle theme for my daughter’s second birthday this weekend. I wanted to do this since I figure soon it will be all princess and pink and she loves animals right now. She was so excited to see all the jungle creatures. All the animals are made with fondant as well as the tree tops. The tree trunks are made from ice cream sugar cones and the rocks from reshaped tootsie rolls. The top round cake I made a rainbow cake and the base cake was half chocolate/half vanilla. The cake was delicious and my daughter loved it. Happy Birthday Big Girl!

This cake was for my son’s 5th birthday party. He was big into Star Wars so we had a Jedi Training Camp with Jedi Robes, Light sabers and the R2D2 Cake. We even had chocolate dipped light saber pretzel sticks and a death star pinata. The birthday was time consuming but well worth it.

To build the R2D2 cake, I used a 6 in round cake pan to stack up the center part of the structure with a bowl cake on top. The side pieces were carved from a sheet cake. The entire cake was frosted with butter cream and the accessories were made with homemade marshmallow fondant (recipe on the Lego Cake post).

I just recently did this cake for my son’s best friend’s birthday. He was turning 5 and both him and my son love Legos, Starwars and Batman. So we just kind of put them all into one cake. The Rainbow cake was just a suggestion from the birthday boy’s mom but was a great suprise at the birthday party. My son is turning 6 in May and I have a feeling I will be trying out the lego cakes again.

To make the cakes, I used a rectangle loaf pan. I made marshmallow fondant to cover the cakes as well as to make the circular lego connectors on the tops. If you have never used homemade marshmallow fondant, it is very easy to make as well as work with and color. Here is the recipe if you would like it:

Ingredients: 21 ounces mini white marshmallows (2 -10.5 ounce bags), 1/2 cup butter, 2 pounds confectioner sugar and 1-3 tbsp water.

I usually heat the butter on the stove top till melted and then add the marshmallows like making rice crispy treats (make sure to keep stirring or the mixture will burn). Then I add half the confectioner sugar to the bottom of an electric mixing bowl. Pour the melted mixture over the sugar and add the remaining confectioner sugar on top. Start the mixer slowly (to avoid a snow storm in your kitchen) and increase the speed as needed adding the water one Tbsp at a time till desired consistency reached.

*I like to make a half a batch at a time and once the marshmallows are all melted this is when I color or add flavoring (the color and flavoring are more consistently spread). You can do a whole batch with the coloring and flavoring if you are needing to cover a large cake or making several things that color.

*I have found that is also helpful to use some a flavored gelatin to start the coloring process and to add flavor to the fondant. For the red fondant on the Lego cakes, I added strawberry gelatin to the melted marshmallow mixture with a small amount of red food dye. The color was rich and it was very tasty.

This was a fun cake to make and the kids really loved it.

I made this cake for my daughter’s first birthday. She is the first and still only granddaughter in our family so as you can image she is very spoiled but also very deserving.

For the main butterfly cake I used two 9 in round cake pans and one 8 in cake cut in half for the lower wings then used buttercream with a star tip to decorate. For the baby cake I used a cookie cutter to cut out the butterfly for her own individual cake of her own. She had icing and cake all the way down to her shoes with a big smile on her face. Priceless.

I can’t wait till birthday number 2.
